I am a historic and unique vintage that bears witness to the winemaking history of Escolives since Roman times with my blend of Pinot Noir and César.
PRODUCTION: Partial destemming, partial carbonic maceration and cold pre-fermentation maceration, aging in oak barrels, blending.
TASTING NOTES:
Appearance: Deep ruby color with cherry highlights.
Nose: Elegant and harmonious, with aromas of red fruit, nutmeg, black pepper, cocoa, and leather.
Palate: Complex, intense, and smooth, with notes of blackberry, firm tannins, a structured body, good intensity, and a long finish.
SERVING TEMPERATURE: Between 14° and 17°C.
CELLARING: Up to 15 years.
